Paul Buck has spent more than 50 years leading people and organizations through growth, change, challenge and opportunity.

His career has taken him from restaurants and private clubs to museums, performing arts centers, major sporting events, corporate environments and complex multi-unit hospitality businesses. Across these very different environments, one principle has remained constant: strong organizations are built by strong leaders and high-performing teams who understand where they are going, what is expected of them and why their work matters.

Paul's approach has been shaped by both the organizations he has led and the people he has worked with and learned from. His leadership philosophy is grounded in listening, trust, clearly understood values, accountability, continuous improvement and authentic hospitality.

Plan with Purpose — Understand the business, its people and what the organization is trying to accomplish. Listen to the people closest to the work and draw on their knowledge and perspective. Then apply experience and judgment to develop the plan, establish priorities and make sure the people responsible for carrying it out understand the why, the direction and their role in its execution.

Lead with Direction — Make sure people understand where the organization is going and their role in getting there. Establish accountability, stay engaged, measure progress and adjust as circumstances change—while remaining a steady presence for the organization and its people.

Meet Paul Buck

Paul began his hospitality career with Restaurant Associates, advancing through the company's management development program to significant operating assignments at the Ford Foundation and serving as opening General Manager for Restaurant Associates' hospitality operations at both Lincoln Center and the Kennedy Center.

He later became General Manager of the Harvard Club of New York City, one of New York's historic private social clubs, leading a complex, 24-hour operation with approximately 10,000 members and more than 300 staff.

Paul subsequently spent nearly a decade as a senior executive with M&T Bank, working directly with CEO Robert Wilmers during an extraordinary period of growth, as the bank grew from approximately $3 billion to $58 billion in assets. His responsibilities included corporate real estate and facilities, leadership development and executive recruiting.

Returning to hospitality, Paul held senior operating roles with Restaurant Associates before joining Union Square Hospitality Group as Director of Operations at MoMA, with responsibility for The Modern, two museum cafés, staff dining and catering. He was later promoted to Managing Partner. Working with Danny Meyer, Paul Bolles-Beaven, Executive Chef Gabriel Kreuther, General Manager Dino Lavorini and the MoMA team, Paul led a complex hospitality operation that earned a Michelin Star and multiple James Beard Awards.

Paul later returned to Patina Restaurant Group as Executive Vice President & COO of West Coast Operations, working with founder Joachim Splichal and leading approximately 40 operating units and more than 1,300 staff across restaurants, cultural institutions, catering and events, and corporate food service. His portfolio included the Los Angeles Music Center, Hollywood Bowl, Segerstrom Center for the Arts, San Francisco War Memorial, LACMA and other prominent institutions.

Since founding BUCK Hospitality in 2016, Paul has worked with owners and leadership teams across restaurants, clubs, hotels, catering, real estate and multi-unit hospitality. Today, he brings that experience directly into organizations through Interim and Fractional COO leadership.

Authentic Hospitality

Hospitality is a 24/7 responsibility of the entire team. Every team member plays a part in how every guest feels.

Over the course of his career, Paul has learned that authentic hospitality is expressed in countless ways—the character and expression of the food and beverages, the tabletop, the design and physical environment, the lighting, the music and sound levels, the energy of the room, and the warmth, intuitive attentiveness and ease of the service. And often it is something as simple as eye contact, a genuine smile and making sure a guest feels welcomed, respected and heard.

Authentic hospitality begins inside the organization. How people lead, communicate, respect and support one another—and how consistently they live the organization's values—ultimately finds its way to the guest.

Even strong organizations need to look in the mirror from time to time, recognize where those connections may be breaking down and continually find better ways to deliver the hospitality they aspire to provide.

Building Organizations That Perform

Paul believes the measure of effective leadership is not simply what gets accomplished while the leader is there, but what the organization is capable of accomplishing after that leader leaves.

Throughout an engagement, he strengthens the leaders and teams who will carry the organization forward. He establishes clear expectations and accountability, gives people meaningful responsibility, and coaches leaders to work with their teams to find better ways of operating. Continuous improvement becomes part of how the organization works—not another initiative or program.

An organization's values matter only when they are understood and reflected in everyday decisions and behaviors. They provide a common standard for how people lead, work together, make decisions, hold one another accountable and serve their guests.

The objective is to accomplish what Paul was brought in to do while leaving behind stronger leaders, high-performing teams, clearer accountability and an operating structure capable of sustaining the progress.
